Delicious



After a busy day shopping, I come home to my cosy kitchen and cook a meal for the family.




Tomato and goats cheese tart


Serves 4:

- 320g ready rolled puff pastry
-125g soft goats cheese
-1 tsp caster sugar (helps to bring out flavours)
- 3 large tomatoes sliced
-1tbsp balsamic vinegar
-1tbsp olive oil
-small handful of torn basil leaves


- Preheat the oven to 220c.
- unroll the pastry on a lined large baking tray:



-Leave a 1cm border and crumble or spread the goats cheese.
-Sprinkle over half the sugar.
-Arrange the tomatoes over the cheese and sprinkle the remaining sugar over.
-Season with salt and pepper.

-Cook in the oven for 20-25 mins:





- Drizzle over the balsamic vinegar and oil and garnish with basil.
Serve with a green salad.

A perfect quick dinner!!!!





Dessert was Coles Hidden orange specially pudding. Boiled in the bag.
Not just for Christmas! I bought this in the sale for less than half price.
